Tomorrow may mark the beginning of fall, but our weather up here has been anything but! It’s been so hot and humid that the only thing I want after work is something crisp and refreshing.

You know that wonderful water in the lobby of resorts that’s full of cut fruit? That’s what I’ve been craving 24/7 in this heat, so I thought I’d share a simple recipe for a refreshing go-to of mine.

I call it a “cucumber smash”, and I hope it will transport you to the most relaxing state of mind – and most tropical destination! It also makes a wonderful cocktail with vodka or gin added if you’re looking for a cool and chic sip.

Here’s what you’ll need:

1/2 of a small cucumber

Fresh sprigs of mint

Sparkling water (I like lime or even strawberry since strawberry and mint love each other)

Sugar to taste

Slice up your cucumber and divide 2-3 pieces into quarters. Save a slice or two of your cucumber for garnish.

In a thick-bottomed highball glass, toss in a few sprigs of mint and muddle. Remember, it’s always easier to add mint than it is to remove it! Using your muddler, smash your diced cucumbers.

Finally, fill the remainder of the glass with sparking water. Add a pinch of sugar. Sip it first and adjust if you need to with sugar, mint, or cucumber. When it’s the flavor you’re after, add ice.

Garnish with one of the cucumber slices on the rim and a fresh sprig of mint.
