Since so many of us are either working from home or in that place in between, I thought a happy recipe would bring everyone some good feelings. I haven’t been sure of what to post during these times, but I feel that perhaps a little distraction might be welcome. If you have something you’d love for me to cover, please comment below. I’ve used this recipe for SO. Many. Things. Baby or bridal showers? Perfect. Polo matches? Excellent. Wednesday sassy desk lunches? Believe it.

Why is it the “best,” you might ask? I’ve tried loads of different versions of chicken salad and this one is tops for me. Every good southerner has a go-to recipe for chicken salad, egg, salad, and deviled eggs. So, here’s mine for chicken salad:

Ingredients:

1 rotisserie chicken, shredded (or two chicken breasts cooked and shredded)

1/4 of mayonnaise (keep it out since you’ll likely need to add an extra tablespoon or two)

1 cup Red or green grapes, sliced in half

3 stalks of celery, chopped or sliced

1/4 sliced almonds (optional)

1/4 tsp garlic powder

1/2 tsp paprika (mostly for color)

Salt and pepper to taste

Our favorite way to enjoy this is to line the bottom of a pita with a few leaves of freshly washed butter lettuce, scoop in the chicken salad, and top it with sprouts. We love picking up fresh pita bread from this local spot. They make them fresh every day. Bonus: they also have the BEST pastries.
